Crock Pot Ribs (one crock pot, two meals)

These meals were absolutely delicious! My pictures (below) don't do them justice, It's just a proven fact that I suck at food photography, and also more relevant, I'm addicted to cilantro. :) I hope you cook these and enjoy! The pizzas were the bomb and I definitely recommend getting the Monterrey jack over mozzarella, it really compliments the pizza well.

Mango-Chipotle Pork Spare Ribs Cilantro-Lime Sweet Potatoes and Black Bean-Pineapple Salad

Mango-Chipotle Pork Spare Ribs

Slow Cooker
Serves 4-6

Ingredients

  • 3½ lb pork spare ribs
  • 1½ tsp chipotle chile powder
  • 1 tsp salt, ¾ tsp pepper
  • 1 Tbsp canola oil
  • 1 mango, peeled and chopped
  • 1 cup low-sodium chicken broth
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)

Instructions

  1. Sprinkle pork with chile powder, salt and pepper. Place in a 5- to 7-quart slow cooker. Add oil, mango, broth, garlic and onion.
  2. Cover and cook on LOW 8 hours. (Shred 2 cups pork, and reserve for Hawaiian Pork Pizzas recipe.) Sprinkle remaining pork with cilantro.

Cilantro-Lime Sweet Potatoes and Black Bean-Pineapple Salad

Serves 4-6

Ingredients

  • 1½ lb sweet potatoes, cut into 1-inch pieces
  • 2 Tbsp olive oil
  • 1½ tsp salt, 1½ tsp pepper, divided
  • 3 Tbsp fresh lime juice, divided
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)
  • 1 (15-oz) can organic black beans, drained and rinsed
  • 1 cup diced fresh pineapple
  • 1 red bell pepper, diced

Instructions

  1. Preheat oven to 400°F. Toss together potatoes, oil, 1 tsp salt, and 1 tsp pepper in a large bowl; arrange in a single layer on a baking sheet.
  2. Bake 20 minutes or until potatoes are tender, turning once. Sprinkle with 2 Tbsp lime juice and cilantro.
  3. Stir together beans, pineapple, bell pepper, 1 Tbsp lime juice, and ½ tsp each salt and pepper.




Hawaiian Pork Pizzas Fruit Salad with Honey-Orange Dressing

Hawaiian Pork Pizzas

Prep Ahead
Serves 4-6

Ingredients

  • 2 (1-lb) balls bakery whole-wheat pizza dough
  • ¾ cup organic barbecue sauce
  • 1 (8-oz) block Monterey Jack cheese, freshly shredded
  • Reserved 2 cups shredded pork (from Mango-Chipotle Pork Spare Ribs recipe)
  • 2 cups chopped fresh pineapple
  • 1 red bell pepper, chopped
  • ½ onion, thinly sliced

Instructions

  1. Preheat oven to 400°F. Let dough stand at room temperature 30 minutes.
  2. Roll out each dough ball into a 12- to 16-inch circle; place each on a large baking sheet. Spread barbecue sauce over dough, and sprinkle with cheese. Top with pork, pineapple, bell pepper, and onion.
  3. Bake 15 to 20 minutes or until crusts are browned and cheese is melted.

Fruit Salad with Honey-Orange Dressing

Serves 4-6

Ingredients

  • ⅓ cup fresh orange juice
  • 2 Tbsp honey
  • ¼ tsp ground cinnamon
  • 1 lb store-bought deli fruit salad

Instructions

  1. Whisk together orange juice, honey and cinnamon in a large bowl. Add fruit salad, tossing to coat.
